INGREDIENTS:
    • 2 cups chopped tomato
    • 1 cup chopped cilantro
    • 1 tbsp water (optional)
    • 2 tbsp oil
    • 2 tsp urad dal
    • 1 tsp cumin seeds
    • 4 garlic
    • salt (adjust to taste)
    • 6 to 10 red chilies (adjust to taste)
    • Little tamarind/imly
    • little hing / asafotida
    • 1/4 cup chopped coconut
    • Curry leaves
    • Tempering:
      • 1 tsp oil
      • 1/2 tsp mustard seeds
      • 1/2 tsp urad dal
      • asafotida/hing
      • curry leaves

INSTRUCTIONS:

    • Turn on instant pot saute mode.  When it is hot, add oil.
    • Add urad dal, cumin seeds, hing, garlic, tamarind, curry leaves, coconut and red chilies - saute for 30 seconds.
    • Add chopped tomato and chopped cilantro - saute for 2 minutes.
    • Turn off saute mode - Let it cool down.
    • Transfer it to the blender and add salt.  Blend it until smooth, if needed add upto 1 tbsp water.
    • For tempering:
      • Heat the pan on the stove top, add oil.
      • when oil is hot, add mustard seeds, urad dal, hing and curry leaves. Wait until it splutters.
    • Pour it to the chutney. Delicious tomato chutney is ready.
    • It goes well with Dosa or Idly.

NOTES:
    • Here I used 6 qt DUO instant pot. You can make the same recipe on stove top too.
    • You can reduce the spice level, by reducing red chilies.
