Instant Pot Healthy Masala Oats with vegetables


    • 1 cup steel cut oats
    • 2 cups water
    • 1/2 cup chopped onion
    • 1/2 tsp ginger garlic paste
    • 1/2 cup chopped tomato
    • 1/4 tsp turmeric powder
    • 1/2 tsp red chili powder (adjust to taste)
    • salt (as per taste)
    • Tempering:
      • 2 tsp oil
      • 1/2 tsp mustard seeds
      • 1/2 tsp urad dal
      • 1/2 tsp cumin seeds
      • curry leaves
    • Mixed vegetables: (any vegetables)
      • 1/2 cup chopped carrots
      • 1/2 cup chopped green beans
      • 1/4 cup green peas

    • Turn on instant pot saute mode. When it is hot, add oil.
    • Add mustard seeds, cumin seeds, urad dal and curry leaves.  wait until it splutters.
    • Add chopped onion, ginger garlic paste - saute until onion turns light brown.
    • Add chopped tomato - saute for a minute.
    • Add your choice of vegetables, here I added chopped carrots, chopped green beans and peas. Saute for a minute.
    • Add turmeric powder, red chili powder, and salt.  Quick stir.
    • Add steel cut oats and mix with water. For 1 cup steel cut oats, you can add 2 cups of water.
    • Close the instant pot lid with sealing position. Set high pressure 1 minutes.  
    • Cancel after 5 minutes and quick release.  
    • Open the lid, garnish with cilantro. Mix it well.
    • Healthy Masala Oats is Ready to eat.
