Instant Pot Broken Wheat Pulao | Dalia Pulao

Cracked Wheat Pulao or Dalia Pulao can be made in the instant pot very quickly. This pulao is cooked with vegetables, garlic and spices. This is my favorite recipe and it can be replaced for rice pulao.  This is fiber-rich food may reduce chronic disease risk, promote weight loss and improve digestion.

Dalia or Bulgur is popular all over the wheat-consuming regions of North India. Dalia has more fiber and protein, and higher levels of most vitamins and minerals.  This dish is a great alternative to rice pulao, and much more nutritious.


    • 1 cup Broken Wheat/Dalia/Bulgur
    • 2 tbsp oil
    • 1/2 cup onion chopped
    • 3 garlics minced
    • 1 tomato chopped
    • 2 green chilies
    • 2 cups water
    • 1 tbsp lemon juice
    • Cilantro to garnish
    • Mixed Vegetables: (you can choose your choice of vegetables)
      • 1/2 cup chopped carrots
      • 1/4 cup chopped green beans
      • 1/4 cup green peas
    • Tempering:
      • 1 tsp cumin seeds (jeera)
      • Curry leaves (optional)
    • Powders:
      • 1/4 tsp turmeric powder (haldi powder)
      • 1/2 tsp red chili powder (mirchi powder)
      • 1/2 tsp coriander powder (daniya powder)

    • Turn on instant pot saute mode.  When it is hot, add oil.
    • Add cumin seeds and curry leaves - wait until it splutters.
    • Add chopped onion, green chilies, and garlic.  Saute until turns into light brown.
    • Add chopped tomato, saute for 2 minutes.
    • Add chopped carrots, green beans, and frozen peas. Saute for a minute.
    • Add turmeric powder, red chili powder, coriander powder and salt - Quick stir.
    • Add cracked wheat - Mix them with water.  For 1 cup cracked wheat, use 2 cups of water.
    • Close the lid with sealing position.  Cancel saute mode, set 3 minutes high pressure. 
    • When it is done, cancel saute mode and open the lid after quick release.
    • Garnish with cilantro and little lemon juice.
    • Yummy Healthy Dalia Pulao is Ready to eat.
