Instant Pot Bell Pepper Rice | Capsicum Biryani/Pulao/Pilaf

Bell peppers are also called Capsicum which are rich in vitamins and antioxidants, especially vitamin C. For this reason, they have several health benefits, such as improved eye health and reduced risk of several chronic diseases. Overall bell peppers are an excellent addition to a healthy diet.






This bell pepper recipe is colorful and flavorful one. This can be served with raita or yogurt.  Capsicum pulao is the best lunch box recipe which is easy to make in busy days. Kids will love these recipe as it is colorful, you can adjust the spice level for them.




INGREDIENTS:

    • 1 cup Basmati Rice
    • 1 1/2 cup Bell Peppers (red,yellow,green) cubed
    • 1 1/2 cup of water
    • 2 tbsp Oil
    • 2 tsp Ghee
    • 1 tsp cumin seeds
    • 1 cup Chopped Onion
    • 1 tsp Ginger Garlic Paste
    • 1 Cup Chopped Tomato
    • 1/4 Cup Yogurt
    • Salt (adjust to taste)
    • To Grind:
      • 1 tsp fennel seeds
      • 3 Cloves
      • 1 stick Cinnamon
      • 1 Cardamom
      • 2 Serrano Pepper/ Green Chilies
      • 1/4 Cup Mint
      • 1/2 Cup Cilantro
    • Powder:
      • 1/2 tsp Turmeric Powder
      • 1 tsp Red Chili Pepper Powder (adjust to taste)
      • 1 tsp Coriander/ Dhaniya Powder
      • 1/2 tsp Garam Masala Powder
      • Tadka/ Tempering:

STEP BY STEP VIDEO:


INSTRUCTIONS:

    • Rince and Soak the Basmati Rice for 30 minutes.
    • Turn On Instant Pot - Saute Mode
    • When the pot is hot, add oil, ghee and cumin seeds.
    • When it splutters add chopped onions and ginger garlic paste - Saute until turns into light brown.
    • Add green paste and chopped tomato, Saute for 2 minutes.
    • Add bell peppers (Here I used green, yellow and red peppers) and saute for a minute.
    • Add yogurt, salt, turmeric powder, red chili pepper powder, coriander powder, and garam masala powder. Give it a mix.
    • Add soaked and drained Rice and water.
    • Close the lid with sealing position, Cancel saute mode, Change to Manual/Pressure 5 minutes High Pressure.
    • After NPR open the lid.
    • Garnish with Cilantro and give a Gentle mix.
    • Yummy Capsicum Biryani is Ready.



NOTE:

    • Here I use 6QT DUO instant pot.
    • It can be served with raita or yogurt.
    • You can use any bell peppers, if you add these 3 different, you will get a colorful pulao.
