Instant Pot Simple Sambar Rice


Sambar rice is a dish made with Lentils, Rice, mixed vegetables, & Spices. It is delicious and flavorful.It is best Served with Spicy Potato Fry.                                                                                                                                                   



INGREDIENTS:


  • 1 1/2 Cup Sona Masoori Rice
  • 1/2 Cup Toor Dal / Split Pigeon Peas
  • Tadka/Tempering:
    • 1/2 tsp Mustard seeds
    • 1/2 tsp Urud Dal
    • 1 tsp Cumin Seeds
    • 1/2 tsp Fenugreek Seeds
    • Hing/ Asafoetida
    • Curry Leaves
  • 2 Cups Chopped Onion
  • 2 Green Chilies / Serena Peppers
  • 1 Cup Chopped Tomato
  • Choice of Vegetables:
    • Chopped Carrots
    • Chopped Drum Sticks
    • Chopped Green Beans
    • Chopped Chayote
  • Masala Powders:
    • 2 tbsp Sambar Powder
    • 1/2 tsp turmeric powder
  • 1/2 Cup Tamarind Juice (watery)
  • Salt as needed
  • Cilantro Chopped

STEPS:

  • Soak Rice and Toor Dal / Split Pigeon Peas in Water
  • Turn on Instant Pot - Saute Mode
  • Add Oil - Once Pot is hot, add Mustard Seeds, Urud dal, Fenugreek Seeds, Cumin Seeds, Hing and Curry Leaves - Give a quick Stir
  • Add Onion, Green Chillies - Saute for a minute
  • Now add Tomato - Saute for a minute.
  • Add your choice of Vegetables, here I add Carrots, Green Beans, Drum Sticks, Chayote - Saute for a minute
  • Add Sambar Powder, Salt, Turmeric Powder - Give a Quick Stir
  • Add Tamarind Juice, Rice and Dal - Mix it all together
  • Add Water 5 to 6 cups - Close the Lid with Sealing Position
  • Set Rice Mode or Low Pressure 12 Minutes
  • Open the lid after NPR (Natural Pressure Release)
  • Garnish with Cilantro and Ghee
  • Mix it all - Sambar Rice is Ready
