Instant Pot Spinach Rice

This Spinach Rice is flavorful and healthy. Using Basmati Rice, Ghee and spices make it more aromatic. Spinach Rice can be cooked in Instant Pot as one pot recipe.

It can be enjoyed with any curry or yogurt or raita.  It is very easy to make and you can add more spinach for healthy version.  Kids will love this rice.

    • 2 cups Basmati Rice
    • 3 cups of water
    • 4 cups chopped spinach (I use organic baby spinach)
    • 2 tbsp Ghee/ Clarified Butter
    • 2 tbsp Oil
    • 2 cups Chopped Onion
    • 1 tsp Ginger Garlic Paste
    • 2 Chopped Tomatoes
    • 3 Serrano Pepper/ Green Chillies
    • 1/2 Cup Mint (optional)
    • Salt to taste
    • Cilantro chopped
    • Powder:
      • 1/2 tsp Turmeric Powder
      • 1 to 2 tsp Red Chili Pepper Powder (adjust to taste)
      • 2 tsp Coriander/ Dhaniya Powder
      • 1 tsp Garam Masala Powder
    • Tadka/ Tempering:
      • 1 or 2 Bay Leaves
      • 3 Cloves
      • 1 stick Cinnamon
      • 1 Cardamom
      • 2 Star Anise
      • 2 tsp Cumin Seeds

    • Rince and Soak the Basmati Rice for 30 minutes.
    • Turn On Instant Pot - Saute Mode
    • Add 2 tbsp Ghee/ Clarified Butter and Oil.
    • When Ghee is hot, add Bay Leaves, Cloves, Cinnamon, Cardamom, Star Anise, and Cumin Seeds
    • Add Chopped Onions,Ginger Garlic Paste, Green Chilies - Saute until turns into golden brown.
    • Add  Chopped Tomato, Saute for 2 minutes.
    • Add chopped spinach and saute for a minute. 

    • Add mint too.
    • Add Salt, Turmeric Powder, Red Chili Pepper Powder, Coriander Powder, Garam Masala Powder. Give it a mix.
    • Add Soaked and Drained Rice and water.
    • Close the lid with sealing position, Cancel saute mode, Change to Manual/Pressure 6 minutes High Pressure.
    • After NPR open the lid.
    • Garnish with Cilantro and give a Gentle mix.
    • Yummy Spinach Rice / Spinach Pilaf is Ready.

    • Adding lime juice at the end makes it wonderful flavor.
    • For kids you can reduce the spice by adding less red chili powder. Add more spinach for healthier version.  It can be a good lunch box recipe.
    • Adding spices are optional, you can skip it if you don't have any of these spices.
