Instant Pot Tindora Sabzi / Ivy Gourd Stir Fry / Dondakaya Kovakka

  • 2 tsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • curry leaves
  • Little asafetida /hing
  • 2 green chilies
  • 1 cup chopped onion
  • 3 cups of chopped tindora
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/4 tsp cumin powder
  • salt
  • 1 tbsp water
  • chopped cilantro

  • Clean and remove edges of tindora.  Cut into vertical pieces.
  • Turn on instant pot saute mode, when pot is hot, add oil.
  • Add mustard seeds, cumin seeds, urad dal, chana dal, curry leaves and hing - wait until it splutters.
  • Add chopped onion, green chilies - saute until onion turns into light brown.
  • Add chopped tindora -Saute for a minute
  • Add turmeric powder, red chili powder, coriander powder, cumin powder and salt - Quick stir
  • Add 1 tbsp water - Close the instant pot lid with sealing position
  • Set low pressure for 2 minutes.
  • Open the lid after natural pressure release. 
  • Garnish with chopped cilantro,  Tindora Sabzi is Ready to eat.
