Instant Pot Bitter Gourd Fry

Instant Pot Bitter Gourd Fry/ Karela Dry Sabji in Instant Pot / Bitter Gourd One pot recipe / Instant Pot Vegeterian Recipe / Bitter Gourd Dry Curry

  • 1 lb bitter gourd chopped
  • 3 tsp oil
  • 1/4 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp urad dal
  • curry leaves
  • little asafotida
  • 1 cup chopped onion
  • 1 cup chopped tomato
  • salt per taste
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder (adjust to taste)
  • 1 tbsp water
  • chopped cilantro


  • Clean and cut bitter gourd
  • Turn on instant pot sauté mode, when pot is hot, add 3 tsp oil.
  • Add mustard  seeds, cumin seeds, urad dal, curry leaves and little asafotida.
  • Add chopped onion - saute until onion turns into light brown
  • Add chopped tomato - saute for 2 minutes
  • Add chopped bitter gourd - saute for a minute
  • Add salt, turmeric powder and red chili powder - Quick stir.
  • Add 1 tbsp water.  Close the instant pot, and cancel saute mode.
  • Set low pressure for 3 minutes.  When it is done, Cancel and quick release after 10 minutes.
  • If needed saute for a minute.  Garnish with chopped cilantro.
  • Healthy One Pot Bitter Gourd Dry Curry is Ready!
