Instant Pot Radish Dry Curry
Instant Pot Radish Dry Curry/ Mooli Sabji.

Radishes are Low in calories and high in water, these root vegetables fit into any diet. They're rich in nutrients, especially vitamin C, potassium, manganese, magnesium, calcium and B-complex vitamins



INGREDIANTS:
  • 2 medium size Radish 
  • 2 tsp oil
  • 1/2 cup chopped onion
  • 2 green chilies
  • 2 minced garlic
  • salt per taste
  • chopped cilantro
  • 1 tbsp dry coconut powder
  • Tempering:
    • 1/2 tsp Mustard Seeds
    • 1/2 tsp Cumin Seeds
    • 1 tsp Urad dal / White Gram
    • 1 tsp Chana Dal / Split Bengal Gram
    • Hing / Asafotida (little)
    • Curry Leaves (optional)
  • Masala Powders:
    • 1/4 tsp Turmeric Powder
    • 1/2 tsp Red Chili Pepper Powder (adjust to taste)
    • 1/2 tsp dhaniya powder

INSTRUCTIONS:
  • Peel the outer skin of radish and cut into small pieces.
  • Turn on instant pot saute mode.  When it is hot, add oil.
  • Add mustard seeds, cumin seeds, urad dal, chana dal, little asafotida, and curry leaves.  Wait until it splutters.
  • Add chopped onion, green chilies, and minced garlic - saute until onion turns into light brown.
  • Add chopped radish - Saute for a minute.
  • Add salt, turmeric powder, red chili powder, and dhaniya powder - quick stir.
  • Close the lid with sealing position.
  • Set Low pressure for 1 minute,  When it is done, wait for 5 minutes. Release the pressure for 5 minutes.
  • Open the lid, now garnish with chopped cilantro and dry coconut powder.
  • Mix them all.
  • Quick Radish Dry Curry is ready!
NOTE:
  • Here I used Instant Pot 6 qt DUO.
  • Adjust green chilies and red chili powder based on your spice level.
