- 2 cups Idly batter
- 2 tsp oil
- 1/2 cup finely chopped onion
- 1 green chili minced (adjust to taste)
- 1/2 tsp ginger garlic paste
- 1/2 cup grated carrot
- 1/2 cup green peas
- chopped cilantro
- salt (adjust to taste)
- 1/4 tsp turmeric powder
- oil to grease idly mold
- Tempering:
- 1/4 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp urad dal
- 1/2 tsp chana dal

INSTRUCTIONS:
- Turn on instant pot saute mode. When it is hot, add oil
- Add mustard seeds, cumin seeds, urad dal and chana dal. Wait until it splutters.
- Add chopped onion, minced green chili, and ginger garlic paste - Saute until onion turns into light brown.
- Add grated carrots, and green peas. Saute for 30 seconds.
- Add turmeric powder and salt - quick stir.
- Turn off instant pot saute mode. Add this vegetable mix to the idly batter. Mix it well.
- Grease the idly plate and pour the mixed batter.
- Add 1 cup water to the bottom of the instant pot. Place trivet. Keep the idly plate inside.
- Close the lid with venting position.
- Set 10 minutes steam, timer won't work on steam venting, use the separate timer for 10 minutes.
- Cancel when it is done. Open the lid. Let it cool for 2 minutes.
- Dip a spoon in some water, run the sides of the idli and it will slide easily.
- Yummy healthy Vegetable Idly is ready.
- It can be served with sambar or chutney.
