Instant Pot Rice Kheer / Rice Pudding/ Rice Payasam


Rice Kheer is also called Rice Pudding or Rice Payasam.  It is delicious and rich, and easy to make with instant pot as it doesn't need any stirring or baby sitting. 


This sweet can be made during festival times. You can make this dessert any time on family together or any office potluck. It is basically made with rice, milk and sugar.


You can use the same recipe in slow cook mode.  Set slow cook mode for 8 hours, creamy rice kheer will be ready.  When kheer is stored, it gets thinker. You can add milk to adjust the consistency.

INGREDIENTS:
    • 1/2 cup basmati rice
    • 1/2 cup sugar (adjust to taste)
    • pinch of salt
    • 5 cups of whole milk
    • 1/4 tsp cardamon powder

    • To Garnish
      • 1 tbsp ghee
      • 1/4 cup chopped nuts (almonds, cashews, pistachios, or raisins)

    INSTRUCTIONS:
      • Rince and drain basmati rice, add them to the instant pot.
      • Add sugar, salt, milk and cardamom powder.
      • Set porridge mode / high pressure 20 minutes. Cancel after it is done.
      • Open the lid after Natural Pressure Release.
      • Turn on the stove and add ghee to the pan. Add chopped almonds, cashews and raisins.  Stir until it turns into light brown.
      • Add these to the kheer, mix them all.
      • Serve rice kheer hot or cold.

    Note:
      • Here I use 6Qt DUO instant pot.
      • If you need more sweetness, add more sugar or  condensed milk to it.
      • You can replace sugar with brown sugar.
      • When Kheer is stored, it gets thicker.  You can add milk to adjust the consistency.
