Instant Pot Plain Cauliflower Rice | No grain rice | Keto Rice

Cauliflower is loaded with nutrients including fiber, vitamins C, K and B6, and potassium. Cauliflower has 25 calories per cup and only 5g carbs per cup vs. 46g for a cup of brown rice. Cauliflower is low in calories and high in fiber. 

A diet rich in fiber promotes healthy digestion, weight loss and lowers cholesterol levels.Cauliflower rice is easy and fast to make. 

Quickly cooked in a little butter enhance the flavor of this dish, it can be softer in 5 minutes saute mode. This is keto friendly recipe, it is the best substitute for plain rice. 
Store this in refrigerator for upto 5 days.

INGREDIENTS:


  • 1/2 head cauliflower
  • 2 tsp coconut oil / butter / olive oil
  • 1 tsp cumin seeds (optional)
  • 2 red chilies (optional)
  • salt (as per taste)

INSTRUCTIONS:


  • Clean and roughly chop the cauliflower. 
  • Add them to the blender / chopper / food processor to chop finely.
  • Turn on instant pot saute mode.  When it is hot, add oil.
  • Add cumin seeds and red chilies - wait until it splutters.
  • Add riced cauliflower, and saute for 5 minutes.  Close the lid and stir occasionally.  It can be ready in 5 minutes saute mode, it is softer as same as rice.
  • Simple plain Cauliflower rice is ready to eat with any curries. 
NOTE:
  • Here I use 6 QT Instant pot DUO
  • Cumin seeds and red chilies are optional.
  • Any vegetables can be added to it. 
  • Garnish them with chopped cilantro.
  • It can be served with curries or any sides or baked chicken.
