STEP BY STEP VIDEO:
INGREDIENTS:
- 3 medium size bitter gourd/bitter melon/ pavakkai / Kakkaraya / Karela chopped
- 1 cup water
- 1 cup chopped onion
- 3 chopped garlic
- 1 small ball size tamarind
- Salt (adjust to taste)
- 1 tsp jaggery
- Chopped cilantro (optional)
- Masala Powders:
- 1/4 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 2 tsp coriander powder (adjust to taste)
- 1 tsp cumin powder (optional)
- Tadka / Tempering:
- 1/2 tsp Mustard Seeds
- 1 tsp Cumin seeds
- 1 tsp Urad dal/ White Gram
- 1 tsp Chana dal / Split Bengal Gram
- 1/4 tsp black pepper (optional)
- Curry leaves (optional)
- 2 red chilies
- Hing / Asafoetida (little)
INSTRUCTIONS:
- In a vessel add sliced bitter gourd, salt and water. Soak it for 10 minutes, it will reduce the bitterness of this curry.
- In a separate bowl, add tamarind and soak it in water for 10 minutes. It will help to make juice easily.
- Turn on instant pot saute mode, when it is hot add oil.
- Add mustard seeds, cumin seeds, urad dal, chana dal, whole pepper and curry leaves.
- When it is splutter, add red chilies, chopped garlic and chopped onion. Saute until turns into light brown.
- Add chopped tomato, saute for a minute.
- Wash and drain the bitter gourd from salt water and add them. Saute for a minute.
- Add turmeric powder, red chili powder, coriander powder, cumin powder and salt. Quick stir.
- Squeeze tamarind and strain the tamarind juice. Add 1 cup of tamarind juice and 1 cup of water with little jaggery. Mix them all.
- Close the instant pot lid with sealing position. Set high pressure for 2 minutes. Cancel or turn off instant pot after it is done.
- Open the lid after natural pressure release. Garnish it with chopped cilantro.
- Healthy Bitter Gourd Curry is ready.
NOTE:
- Here I used 6QT DUO instant pot.
- You can reduce the spice level by reducing the chili powder.
- You can skip the spices if it is not available.
