INGREDIENTS:
- 1 cup chopped onion
- 12 oz frozen cauliflower rice
- 1 tsp minced ginger garlic
- 1 tsp salt (adjust to taste)
- 1 tbsp ghee
- Powder:
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder (adjust to taste)
- 1/2 tsp coriander powder
- 1/4 tsp garam masala powder
- Tadka/ Tempering:
- 1 Bay Leaf
- 2 Cloves
- 1 stick Cinnamon
- 1 Cardamom
- 1 Star Anise
- 1 tsp Cumin Seeds
INSTRUCTIONS:
- Turn on instant pot saute mode. When pot is hot, add ghee.
- Add Bay Leaves,Cloves,Cinnamon,Cardamom,Star Anise and Cumin Seeds. Wait until it splutters.
- Add chopped onion and minced ginger garlic - Saute until it turns into light brown.
- Add frozen riced cauliflower - Saute for 30 secs
- Add turmeric powder, red chili powder, coriander powder, garam masala powder and salt. Quick stir.
- Close the lid with sealing position.
- Set steam 0 minute.
- Once it is done, open the lid after quick release.
- Garnish with cilantro.
- Healthy delicious low carb Rice is ready!
NOTE:
- Serve it with Raita or curry.
- Don't add water for frozen cauliflower as it has a water content. If you use fresh cauliflower, you can use 1 tbsp water.
