Instant Pot Ghee Rice in Coconut Milk | Coconut Milk Rice

This easy coconut milk rice is rich, aromatic and delicious! This recipe can be made with canned or fresh coconut milk. This goes well with any curry.


                                               


INGREDIENTS:

    • 4 cups Basmati Rice
    • 6 tbsp Ghee/ Clarified Butter
    • 2 cups unsweetened coconut milk
    • 4 cups of water
    • 1 tbsp Ginger Garlic Paste
    • 5 Serrano Pepper/ Green Chilies (adjust to taste)
    • 1/2 Cup Mint
    • Salt to taste
    • 2 tbsp roasted cashews (optional)
    • Cilantro chopped
    • Tadka/ Tempering:
      • 2 Bay Leaves
      • 3 Cloves
      • 1 stick Cinnamon
      • 1 Cardamom
      • 2 tsp Cumin Seeds

INSTRUCTIONS:

    • Rince and Soak the Basmati Rice for 30 minutes.
    • Turn On Instant Pot - Saute Mode
    • Add Ghee/ Clarified Butter, when ghee is hot, add Bay Leaves, Cloves, Cinnamon, Cardamom, and Cumin Seeds.
    • Add ginger garlic paste, green chilies and mint, Saute for 2 minutes.
    • Add soaked and drained rice, saute for 2 minutes.
    • Add unsweetened coconut milk, salt, cashews and water - mix all together.
    • Close the lid with sealing position, Cancel saute mode, Change to Manual/Pressure 5 minutes High Pressure.
    • Open the lid after Natural Pressure Release.
    • Garnish with Cilantro and give a Gentle mix.
    • Yummy Coconut Milk Rice is Ready.
