Spicy Dry Potato Curry is simple, easy and quick to make. It goes well with roti, paratha or rice. This is perfect for busy weekdays.

INGREDIENTS:
- 3 tbsp Oil
- 4 medium-size potatoes chopped
- 2 red pepper chilies
- 1 cup chopped onion
- 1 tbsp minced ginger-garlic
- 2 tbsp chopped cilantro
- Salt (adjust to taste)
- 1 tbsp water
- Powder:
- 1/2 tsp Turmeric Powder
- 1 tsp Red Chilli Pepper Powder (adjust to taste)
- 1 tsp coriander powder
- 1/2 tsp cumin powder (optional)
- Tadka/ Tempering:
- 1/2 tsp Mustard Seeds
- 1 tsp Cumin seeds
- 1 tsp Urad dal
- Curry Leaves (optional)
- Hing / Asafoetida (little)

INSTRUCTIONS:
- Wash and peel the potatoes, cut them into small pieces.
- Turn on the instant pot saute mode. When the pot is hot, add oil.
- Add mustard seeds, cumin seeds, urad dal, red chili pepper, and curry leaves. Let it splutter.
- Add chopped onion, minced ginger-garlic. Saute until it turns into golden brown.
- Add chopped potatoes - Saute for a minute
- Add turmeric powder, red pepper chili powder, coriander powder, and salt - Give a quick stir. Mix with cumin powder and 1 tbsp water.
- Close the lid with sealing position, Cancel saute mode and set low pressure for 3 minutes.
- When it beeps, turn it off after 5 minutes. Release the pressure manually and open the lid.
- Add chopped cilantro. Give a gentle mix.
