Instant Pot Spicy Dry Potato Curry


Spicy Dry Potato Curry is simple, easy and quick to make. It goes well with roti, paratha or rice. This is perfect for busy weekdays.

INGREDIENTS:

  • 3 tbsp Oil
  • 4 medium-size potatoes chopped 
  • 2 red pepper chilies
  • 1 cup chopped onion
  • 1 tbsp minced ginger-garlic
  • 2 tbsp chopped cilantro
  • Salt (adjust to taste)
  • 1 tbsp water
  • Powder: 
    • 1/2 tsp Turmeric Powder
    • 1 tsp Red Chilli Pepper Powder (adjust to taste)
    • 1 tsp coriander powder
    • 1/2 tsp cumin powder (optional)
  • Tadka/ Tempering: 
    • 1/2 tsp Mustard Seeds
    • 1 tsp Cumin seeds
    • 1 tsp Urad dal
    • Curry Leaves (optional)
    • Hing / Asafoetida (little)

INSTRUCTIONS:

    • Wash and peel the potatoes, cut them into small pieces.
    • Turn on the instant pot saute mode.  When the pot is hot, add oil.
    • Add mustard seeds, cumin seeds, urad dal, red chili pepper, and curry leaves. Let it splutter.
    • Add chopped onion, minced ginger-garlic. Saute until it turns into golden brown.
    • Add chopped potatoes - Saute for a minute
    • Add turmeric powder, red pepper chili powder, coriander powder, and salt - Give a quick stir.  Mix with cumin powder and 1 tbsp water.
    • Close the lid with sealing position, Cancel saute mode and set low pressure for 3 minutes.
    • When it beeps, turn it off after 5 minutes.  Release the pressure manually and open the lid.
    • Add chopped cilantro.  Give a gentle mix.
    • Yummy Spicy Potato Fry is Ready.
