INGREDIENTS:
- 2 cups of Thin Poha
- 1 cup of water
- 2 tbsp oil
- 1 cup chopped onion
- 1 tbsp chopped ginger
- 3 Serrano pepper/ green chillies
- 1/4 cup chopped green peppers
- 1/4 cup frozen green peas
- Curry leaves (optional)
- Salt to taste
- 1/4 cup cream (optional)
- Cilantro chopped
- 1 tbsp Ghee
- Powder:
- 1/2 tsp turmeric powder
- 1/4 tsp Red Chilli Pepper Powder (adjust based on your spice level)
- Tadka/ Tempering:
- 1/2 tsp Mustard Seeds
- 1 tsp Cumin seeds
- 1 tsp Urud dal/ White Gram
- 3 tbsp Peanuts
- Curry leaves (optional)
- Hing / Asafoetida (little)

INSTRUCTIONS:
- Add 2 cups of poha in a bowl, soak it in 1 cup of water. Keep it aside for 10 minutes.
- Turn on Instant Pot Saute mode - when pot is hot add oil.
- Add mustard seeds, cumin seeds, urud dal, peanuts, curry leaves and hing.
- When it is splutter, add chopped onion, green chillies and chopped ginger - Saute until onion turns golden brown.
- Add green peppers and green peas (or any vegetables of your choice like carrots, green beans or corn) - Saute for a minute.
- Add turmeric powder, red chilli powder and salt - mix it well. Now change the setting to Less saute mode to avoid burning at the bottom.
- Add poha/flattened rice, sprinkle 1 tbsp water if it is dry. Mix it all together.
- Close the lid with sealing position - Cancel saute mode - Set Low pressure 0 minute. For think poha adjust the time to 1 -2 minutes.
- Open the lid after 2 minutes quick release. Garnish with chopped cilantro and ghee.
- Delicious Poha upma is Ready!
