Sambar is made with Lentils, mixed vegetables & Spices. It is delicious and flavorful.It can be served with Plain rice, Idly or Dosa.

INGREDIENTS

    • 1 Cup Toor Dal / Split Pigeon Peas
    • 3 tbsp oil
    • 1/2 cup Chopped Onion
    • 2 Green Chilies / Serena Peppers
    • 1 Cup Chopped Tomato
    • 1/2 Cup Tamarind Juice (watery)
    • Salt as needed
      • Cilantro Chopped
      • 1 tbsp Ghee
      • Tadka/Tempering:
        • 1/2 tsp Mustard seeds
        • 1 tsp Urud Dal
        • 1 tsp Cumin Seeds
        • 1 tsp Fenugreek Seeds
        • Hing/ Asafoetida
        • Curry Leaves
      • Choice of Vegetables:
        • Chopped Carrots
        • Chopped Drum Sticks
        • Chopped Green Beans
        • Chopped bottle gourd
      • Masala Powders:
        • 2 tsp Sambar Powder
        • 1/2 tsp turmeric powder

    INSTRUCTIONS:

      • Soak Toor Dal / Split Pigeon Peas for 30 minutes.
      • Turn on Instant Pot - Saute Mode
      • Add Oil - Once Pot is hot, add Mustard Seeds, Urud dal, Fenugreek Seeds, Cumin Seeds, Hing and Curry Leaves - Give a quick Stir
      • Add Onion, Green Chillies - Saute for a minute
      • Now add Tomato - Saute for a minute.
      • Add your choice of Vegetables, here I add Carrots, Green Beans, Drum Sticks, and bottle gourd - Saute for a minute
      • Add Sambar Powder, Salt, Turmeric Powder - Give a Quick Stir
      • Add Tamarind Juice and soaked dal - Mix it all together
      • Add Water 4 cups - Close the Lid with Sealing Position
      • Set High pressure 10 minutes (15 minutes for unsoaked dal.
      • Open the lid after NPR (Natural Pressure Release)
      • Garnish with Cilantro and Ghee.
      • Mix it all - Delicious Sambar is Ready
